Ingredients  (for about 2 pots):

  • 1.5 kg thick mandarins  (thick skin)
  • 1 teaspoon baking soda
  • 700 g sugar
  • 1 glass of lemon or tangerine juice  (225 ml)
  • 1 cinnamon stick  (optional)
  • 1 teaspoon butter  (to reduce foam)
  • Juice of 1 lime  (to adjust texture)

Preparation Steps  :

1. Preparation of the Barks

  • Wash the tangerines with water and baking soda (1 tsp) for 30 minutes to remove impurities.
  • Carefully remove the white skin inside and outside of the peels. Rinse thoroughly.
  • Boil the peels for 5 minutes in a pan of water, discard the water, then repeat the operation a second time to remove the bitterness.

2. Cooking the Barks

  • Place the peels in a saucepan, cover with water and bring to the boil.
  • Add half of the sugar (350 g) and the mandarin/lemon juice. Mix and let stand for 5 minutes.
  • Cook  over medium heat  for  25 minutes without a lid , regularly skimming off the foam. Stir in the butter to limit the foam.

3. Finalizing the Marmalade

  • Add the remaining sugar (350 g), the cinnamon and continue cooking  for 20 minutes  , stirring with a hand blender for a smooth texture.
  • Check the consistency: if too liquid, add the lime juice and cook for  5 more minutes . Remove the cinnamon at the end of cooking.

4. Potting

  • Pour the hot marmalade into  sterilized jars , seal tightly with new lids, then turn the jars upside down until completely cooled. This ensures optimal conservation (up to 2 years in a cool place).

5. Tasting

  • Open a jar after cooling and enjoy this marmalade on toast, in cakes, or with fresh cheeses. A delight with citrus and cinnamon aromas!
